About The Book

The aim of this study was to assess the microbiological quality of a group of street meals sold at various restaurants (Malewa) located mainly along the road to Camp Ketele in the Commune of Kabondo in Kisangani in accordance with AFNOR standards. The meals analyzed consisted of rice beans and pondu. Samples were taken from 3 different restaurants along the road to Camp Ketele. The main germs tested were total aerobic mesophilic flora (TAMF) total coliforms (TC) Staphylococcus aureus and Salmonella sp.The hygienic quality of rice bean and pinto samples was assessed on the basis of microbiological criteria.
