Chemistry of plant raw materials

About The Book

In the review the data on the use of enzymes of the peroxidase superfamily of plant and fungal origin as catalytic agents for the oxidation of lignin and its model compounds by hydrogen peroxide are considered. A comparative characterization of the structure and mechanism of catalytic action of these enzymes is given. Enzymes of peroxidase family of fungal and plant origin have similar structure but higher stability and pH-optimum for plant peroxidases are noted. It is concluded that it is promising to conduct studies on the influence of functional nature polymo-molecular properties and patterns of redox transformations in the process of catalytic oxidation of lignin substances by plant peroxidases.
