Design and production of corn beer and comparison of chemical analysis

The specific objectives of our work were : -To produce maize beer; knowing that barley is hard to grow in sub-Saharan Africa where we come from ; -To make the quality control and chemical analysis of our maize beer by : Sensory analysis Physical and chemical analysis Gas chromatography Electron paramagnetic resonance(EPR); -To compare the chemical characteristics of our maize beer with the traditional barley beer.
