Ginger (Zingiber officinale Rosc) a species of the Zingiberaceae family is an annual herbaceous plant. It is one of the most important spices in the world. Its importance is food but it is also a crop that generates income for producers. In order to document the endogenous knowledge on the speculation as well as an agromorphological characterization a survey among producers sellers of medicinal plants and spices as well as users and tradithérapeute was conducted.Regarding the agromorphological characterization of the species the data analysis is based on post-harvest data. A total of 09 variables were taken into account 4 of which were quantitative. The results allowed us to make descriptive statistics and to establish the variation within the quantitative variables. The combination of qualitative and quantitative values resulted in the ascending hierarchical classification of the 29 accessions under study. The dendrogram resulted in 3 groups with different characteristics.
