The overall objective of the present research was to identify a new and novel Aspergillus species which has got the inherent capacity to produce alpha amylases which are starch degrading enzymes that catalyze the hydrolysis of internal alpha 1-4 glycosidic bonds in polysaccharides and to develop a strategy for the fermentative production at higher scale by optimizing all the essential fermentation parameters and other aspects which can result in increase in yield or productivity of the enzyme production. This book details the process of isolation characterization and optimization of various process parameters for obtaining enhanced yields of amylase enzyme.
