The book was a cumination of 4 years of menu writeing by the author All together he has written 350 menus and going through them to make sure the short cuts and tricks work for everyone not just the (elite). His intent with this book was too get everyone back into enjoying food and prepareing food in different ways and using different ingredients that would normally not be known to go together. his book will show you classical soups and stocks just so you have a base to start with and they are broken down to the simpilest form as well very easy to foolow and to make. He has some classical dishes that he has changed after doing them and finding that people he has cooked for really enjoyed them. His teqniques are classical but his ingredients aren''t classical in this book you will see how he pairs meats with fruit to make them go together as if they where made for eachother. He has a way of making ingredients that would normally not be thought of in the ways he describes blend smoothly and he wants everyone to be as comfortable with them as he is. He has 96 recipes in this first book of a planned 3 for menus he also goes into the history of ingredients as well so that you know when they where used in the culinary world. He will get more indepth with wines in the follow up book as well. He hopes you enjoy his book he has enjoyed writeing it and is hard at work writeing the other cook books as well .
