In order to guarantee family survival several initiatives are taken here and there especially by women in the context of processing local food products. In studying this manual AVOLAR is pursuing a single goal: to reduce fruit wastage as more than 100000 tonnes of mangoes and other fruits rot at the foot of trees every year. In each of the countries of Central and West Africa in general and in the Democratic Republic of Congo in particular to improve the nutrition of the population during the hunger gap and to provide some income to the manufacturers of juices syrups jams and dried fruits by teaching them how to develop the fruits. This objective is of interest to all development agents but also to the population as a whole and to women in particular. Thus it is with this in mind that we would like to help those engaged in the said activity to solve these problems mainly technical and to contribute to the improvement of their practices that this guide is elaborated.
