Healthiness and food: a practice in extension projects

Healthy eating is everyone's right. Eating outside the home has been a constant practice in the last 20 years and alongside this growing habit there are health problems such as repeated cases of food infections. This research presents the aspects that involve not only healthiness with regard to hygiene and food safety but also creativity for innovation of traditional recipes aiming at a greater use of inputs and healthiness of traditional recipes. In particular this work represents a realisation of the research activities developed by the students of the gastronomy course at Faculdade Senac Pernambuco. In addition to skills in the kitchens students are also invited to develop skills in the area of scientific initiation and extension research.
