This book describes a perspective on the role of interfacial rheology on the conformations of different classes of proteins at air/buffer water/solvent and solid/solution interfaces and possible folding/misfolding events that lead to both organized and disorganized assemblies of proteins near the interface. It is an attempt to use simple experiments at interfaces that explore both native as well as non-native conformational states of the protein and their relation to rheological indicators.
