Isolation of protease producing microorganism from food waste

Proteases are the class of enzymes which occupy key position with respect to their applications in both physiological and commercial fields. Proteases are also known as peptidyl – peptide hydrolases and are industrially useful enzymes which catalyze the hydrolysis of peptide bond from protein molecule. Proteases constitute 0-6% of the global industrial enzyme market most of which are alkaline proteases.
