Bacteriocin is proteinaceous antibacterial compounds which constitute a heterologous subgroup of ribosomal synthesized antimicrobial peptides. Bacteriocin can be used as bio preservatives in fermented foods. The strains of lactic acid bacteria have also potential to act as a biopreservative or natural food preservative.
