About The Book

The conditions under which milk is produced have a direct impact on the quality of the raw material yield and properties of the dairy products. And consumers are increasingly looking for quality products in the broad sense of this word. Thus in order to shed light on this theme this book was developed by Prof. Dr. Gabriela Vieira do Amaral together with students from the University of Vassouras and comprises an analysis of the quality aspects of milk and the conditions under which it is obtained in dairy farms.
