In Asia particularly in India and Pakistan arugula is used as an important source of oil (taramira oil). Over the past two decades this plant has become very popular and widely produced by fresh-cut industries due to its short life cycle (40-60 days) and spicy taste. It is also known for its widespread medical use. Traditionally arugula has been used as an astringent diuretic digestive emollient tonic depurative laxative rubefacient and aphrodisiac. The oil from the seeds in particular can be used as an antiseptic. This study concerns the valorization of the Eruca vesicaria plant by using it in a food application concerning the incorporation of its fresh leaves and their ethanolic extracts in the preparation of minced poultry meat.
