Cachaça is the Brazilian drink better known than samba and soccer. It is the second most consumed alcoholic drink by Brazilians second only to beer. Production is divided into artisanal cachaça (from a still) and industrial cachaça (column distilled). The aim of the study was to assess the quality of these cachaças through physico-chemical analyses such as volatile acidity alcoholic strength pH copper higher alcohols aldehydes esters furfural and methanol.
