Not only for its fruit of which there are thousands of varieties but also for its ecosystem services and the various uses of its by-products for the benefit of oasis dwellers and their livestock. Date pits are one of the by-products of date palms. They are discarded or partially incorporated into animal feed or used in the treatment of diabetes as an anesthetic in cosmetics etc. resulting in a significant economic loss. Rich in antioxidants and other active substances with high added value they deserve to be exploited.This book aims to take a look at the phytochemical composition of the lipid profile in terms of fatty acids sterols and tocopherols in date kernel oil.
