Pinus Cembroides; its antioxidant activity and phenolic content

About The Book

Pinus cembroides Zucc. is the most widely distributed pine tree in Mexico and is used as a timber and forest resource and the pine nut is used for consumption however the high nutritional value is still unknown. The objective of this research was to analyze the polyphenolic content and antioxidant activity of Piñón in four populations of the state of Hidalgo and one of Chihuahua. Using Folin-Ciocalteu and catechin techniques polyphenolic compounds were determined and antioxidant activity was determined by FRAP ABTS and DPPH techniques. A Pearson correlation analysis showed that there is a negative correlation between the amount of precipitation in the areas where populations develop with the antioxidant activity determined by DPPH and a positive correlation with the humidity of the seed and the antioxidant activity determined by ABTS and FRAP.
