Until a few years ago quinoa was considered a lost crop of the Incas but today it is a real alternative for food security worldwide. It is now cultivated under very diverse conditions in areas far from its centre of origin. It is capable of producing grain of high biological value even at altitudes of 4 000 m above sea level and tolerates stress factors such as water deficit and soil salinity.
