White asparagus is one of the most important vegetables in Germany. The asparagus market is characterised by particularly high quality standards. Particular attention is paid to ensuring that the asparagus on the market is free of discolouration. Pink-purple discolouration is caused by anthocyanin synthesis which is dependent on temperature and light. For this reason asparagus growers must pay particular attention to the correct post-harvest treatment of the asparagus so that it can compete on the market.
