Inulinases hydrolyze the bonds of inulin [β-D-(2-1) fructosyl-fructose] obtaining fructose and/or fructooligosaccharides as a product. Important applications at the industrial level are obtaining fructose syrups and fructooligosaccharides (FOS). FOS are prebiotics that stimulate the growth of colon bacteria which prevent colonization by pathogens responsible for human diseases. The objective of this work was to determine the optimal physical and chemical factors for the production of inulinase by Aspergillus niger and to study some kinetic characteristics to be applied in the production of FOS. The optimization of inulinase production achieved in this project and the characteristics studied are important for obtaining products from fructans and their future applications in health promotion.
