Mango is an important tropical fruit highly appreciated for its nutritional characteristics. Therefore this study aimed to quantitatively analyse the presence of glucose and fructose in three mango varieties: Tommy Espada and Rosa. For the quantitative analysis of carbohydrates the Glucose Oxidase and Colorimetric Tests for Fructose using resorcinol were used. The results showed that the time of year and season can influence the state or process of fruit ripening highlighting the need to determine the glucose and fructose levels of mangoes in a given season or time of year. The final results for the 2016/2017 season showed that Tommy mangoes had the lowest glucose and fructose levels.
