<p>Natural extracts particularly essential oils (EOs) represent a fascinating research topic due to the recognized biologically active properties (e.g. antioxidant antibacterial antiviral etc.) of their volatile compounds. These properties have gradually led EOs to become widespread in the food pharmaceutical and beauty/cosmetic industries. Taking into account the current trend of green consumerism which involves substituting synthetic additives with new additives of natural origin (which mainly involves EOs) along with the interests of the researchers whose research can be found in this Special Issue not only is the current topic of significant interest it also holds great potential as a future research direction.</p>
