Predictive microbiology focuses on indicating the possible variations that occur among populations of micro-organisms as a result of the environmental factors to which they are exposed. Thus based on the observations already analysed it is possible to predict the behaviour of micro-organisms in a given environment. In this sense the use of this tool can be a strategy used for the prevention of microbiological hazards allowing the adoption of effective corrective measures to be used in areas relevant to food quality and safety.
