Tannases are on duty

With time progression tannases has shown immense importance due to its commercial viability and its complexity as a catalytic molecule. It has already proven to have potential applications in food feed and pharmaceutical industries. Tannins the main chemical group of natural anti microbials occurring in plants is hydrolyzed by tannases. The production economics depends on the tannic acid (tannin) concentration thus obtained from biomass of agro residues. In this book the work is divided into eight major chapters which outlines about the concept of tannase in terms of scientific and technological exploration. Herein the optimal conditions for tannase production through microbial route have been discussed. In next few chapters purification description of the enzyme properties and the commercial applications to the perspectives including expression studies regulation and its potential uses has been studied.
