The study of the problem of the hygiene of cow meat in the markets of the city of Bukavu. This study. The general objective was to contribute to the improvement of cow meat hygiene in the market in order to provide consumers with good quality meat. The prevalence of hygienic measures for cow meat at the market is 65.8%; the consequences most known by sellers in case of non-compliance with the hygiene of meat sold at the market are exposure to diseases such as diarrhea cholera typhoid fever; the involvement of the authorities (veterinarians) in the control of the sale of cow meat at the market is lower at 29.2%; Although there is a law on hygiene in the DRC an ordinance taken in consideration of the decree of July 26 1910 on the manufacture and trade of foodstuffs also the ordinance of March 3 1937 and the ordinance-law of December 28 1943 but its implementation remains a great problem for veterinary inspectors. Consequent measures must be taken so that consumers of cow meat can eat healthy meat.
